What is Jerusalem artichoke
and what makes it so special?

Jerusalem artichoke (Helianthus tuberosus) is a plant in the daisy family (Asteraceae) and a close relative of the sunflower (Helianthus annuus).

Although Jerusalem artichoke forms tubers, it isn’t a potato. It has a mildly sweet taste and can be used fresh, cooked, dried, or processed into powder and other food products.

Jerusalem artichoke is especially interesting for its natural composition — inulin and other types of fibre.
